Ticket to Hell is on Offer at Europe's Airlines -- а вот исключительно вдумчивая статья про авиацию. Там говорится, что сегодня все всегда покупают самый дешевый билет независимо ни от каких других факторов (хоть без еды, хоть стоя, хоть вверх ногами), а дай срок -- и во всех остальных индустриях так будет, например, во всех ресторанах будут подавать только консервы, и только самые дешевые. Это взгляд в корень. Чувство собственного достоинства - зыбкая и легко исчезающая вещь.

Aviation is one of the most heavily regulated industries. It is overrun by trade unions. Its "safety" regulation amounts to mountains of inane (but very costly) mandatory directives. The ground operations are generally concentrated on government property (i.e. airports). I.e. if you think airlines can get better food, you're mistaken - the companies which are permitted to operate at the airports delivering the food have no competition whatsoever. Same goes for baggage handling. Same goes for fuel provisioning. And airline security was simply nationalized after 2001, with predictable results.
